About the Author
Tracey Lister knows how to shop, cook, and eat in Vietnam. After fifteen years in the Melbourne restaurant scene, Lister took a sabbatical in Hanoi, where she met Jimmy Pham, founder of KOTO, a grassroots charity that helps street kids through vocational training in cooking and serving. Lister stayed on for a few years, setting up accredited training programs for the students. Her time at the charity, along with husband Andreas Pohl, resulted in their first book, KOTO. Lister currently runs a successful cooking school out of Hanoi.

well illustrated, recipies lacking

scanning the recipes i found that substitutions or short cuts were made. sadly these changes would result in an end product not true to the product. for example, under fried food, banh goi. they use wonton wrapper as the pastry for the fried dumpling. if you look at the picture, clearly dumpling is made of a pastry from a rolled out dough. another example is making rice noodles, on pg 22. the instructions are confusing. when making the steam noodles, Vietnamese use a special steaming pot to make these noodles. the pot has a fitted ring where one can stretch a muslin cloth over. and this ring is placed on top/along the edge of the pot. try stretching muslin cloth on a steaming pan and you can see how it's not going to work. like i said, well illustrated, but the recipes and instructions are lacking.
